The majority of Turkish carrots are dark orange, but there are also stringy and purple carrots. Standard carrots are defined as having a cylindrical shape tapering towards the tip, smooth surface and a blunt tip measuring approximately 15-22 cm. in length and 2-3 cm. thick. While the carrots described above are generally consumed on the table, they are also used in industry to a lesser extent. Dark purple carrots, which are used in the pharmaceutical and cosmetic industries, have been exported recently.
